The owner and chef of the Spring, La Bourse and La Vie in Paris and chef of the unmissable Coucou in New York Daniel Rose relaunches La Vieille, a traditional bistrot nested in a 16th century house in the heart of les Halles in Paris. Elliott Barnes, star interior designer on The Invisible Collection, and his team were challenged to preserve the vintage looks of La Vieille while adding chic and modernity to it. On the ground floor, the bar has been treated with light wood and tin. On the first floor, a more intimate dining room area brings together shades of mat blue and metal with grape velvet benches and chairs. The signature recipes are classics of the house and of French cuisine : herring and apples, half-cockerel à la diable, duck terrine, veal ragout de la Vieille, rice pudding with pink praline and flan with prune. A welcomed alternative to the beloved Ami Louis, with an added touch of style !
